Kale & Pomegranate Salad

Ingredients
  

  • 4 cups kale destemmed & torn into bite-sized pieces
  • 1 cup pomegranate seeds
  • 1/4 cup slivered almonds toasted
  • 1 cup mandarin slices
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp agave nectar or maple syrup
  • salt and pepper to taste

Method
 

  1. In a large bowl, massage kale with olive oil until slightly wilted
  2. Add pomegranate, mandarin slices, and slivered almonds
  3. Whisk together lemon juice, agave, salt and pepper
  4. Drizzle dressing over salad and toss to coat
  5. Serve immediately or chill before serving
